Thank You Pancakes with Bananas Foster Sauce
Easy grain-free pancakes that fluff up just like traditional recipes, with the most scrumptious Bananas Foster-style sauce!

Ingredients
Pancakes
- 3 large eggs
- ½ cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 6 tablespoons coconut flour
- 3 tablespoons chia seeds
- 1 tablespoon plus 1 teaspoon maple syrup
- 1/4 teaspoon baking soda
- 1 teaspoon apple cider vinegar
- ¼ teaspoon salt
Bananas Foster Sauce
- 2 ripe bananas chopped into 1 inch pieces
- 2 tablespoons maple syrup
- ¼ teaspoon vanilla extract
- pinch salt
Instructions
Pancakes
- Combine all ingredients in a mixing bowl and whisk until smooth. This is a thick batter and it will almost become dough-like if you let it sit out longer than 10 minutes. This is completely fine.
- Heat a large nonstick skillet to medium-high heat. Using a 1/3 cup measure, scoop batter and add to the heated skillet. Depending on the consistency of the batter, use a wide-set spatula to flatten the batter to ½ inch thickness. Make as many pancakes as you can fit in the pan without touching.
- Cook until the edges have become rounded and golden. You should be able to insert the spatula underneath without the batter sticking. This is approximately 2 minutes.
- Flip and cook until batter no longer sticks, approximately 1 minute. Remove from heat.
- Serve topped with Bananas Foster Sauce and extra Maple Syrup or nut butter.
Bananas Foster Sauce
- Heat bananas and maple syrup in a small saucepan to medium-high heat. As the maple syrup starts to bubble, mash the bananas into the liquid, forming a chunky sauce. Add vanilla extract and salt and whisk to combine.
- Remove from heat and serve over pancakes.
