This delicious granola takes less than 10 minutes to make, and it is such a versatile breakfast, snack or topping.

  • 1/2 cup unsweetened shredded coconut
  • 1 1/2 cups instant oats
  • 1 cup Medjool dates pitted buy with the pit-in
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract or 1/4 tsp almond
  • 2 tablespoons unsweetened milk of choice


  • Add dates to a food processor and blend until they form a chunky paste. Add remaining ingredients and pulse until just combined. Enjoy immediately!
  • Store leftover rawnola in a tightly sealed container in the refrigerator for up to 1 week, if milk of choice was fresh when you made it.


*Unless you have a wide-base Vitamix or Blendtec (instead of the original shape with a narrow base), do not attempt this in a blender. It will turn to complete mush for you to get it mixed together.
