Oil-Free Crockpot Fajitas
With this one-step recipe, I'm busting out the crockpot again to make dinner a breeze! Not only are these Crockpot Fajitas crazy simple, they're delicious and fall-apart tender! AND they're amazing as leftovers.

Ingredients
- 1 lb sirloin sliced into 3/4 inch strips
- 1 lb boneless, skinless chicken breasts sliced into 3/4 inch strips
- 1 large sweet white onion sliced into 1/2 inch half-moons
- 3 bell peppers sliced into 3/4 inch strips(rec. yellow orange &/or red)
- 1 tablespoon low sodium tamari or soy sauce
- 2 tbsp tomato paste
- 2 tbsp honey
- 1 teaspoon sea salt add more to taste, I used 2 tsps
- 1 tablespoon chili powder
- 2 1/2 teaspoons garlic powder
- 2 1/2 teaspoons onion powder
- 2 1/2 teaspoons paprika
- 1 teaspoon cumin
- 1/2 cup low-sodium chicken stock
Instructions
- Combine all ingredients in a crockpot. Stir to roughly distribute spices. Turn to LOW setting and cook for 6-8 hours or on HIGH for 3-4 hours. Taste for seasoning. Serve with tortillas, guacamole, shredded cabbage, cilantro, salsa and lime juice. Or whatever you like!
