This bright, creamy overnight porridge is one of my favorite breakfasts on a warm summer morning!
Servings 2
Ingredients
1cupgluten-free rolled oats
1cupunsweetened almond milk
2tablespoonscoconut creamoptional but it adds a layer of healthy decadence
16ouncecontainer plain yogurt coconut or dairy
1teaspoonvanilla extract
2tablespoonsflax meal
2tablespoonschia seeds
pinchsalt
1tablespooncoconut sugar or 4 drops liquid Steviacan also substitute 2 tablespoons maple syrup or honey but reduce almond milk to ¾plus 2 tablespoons
3/4cupfrozen or fresh strawberries
Instructions
Combine all ingredients in a high-speed blender or food processor and puree until smooth. Empty in a bowl, cover and refrigerate overnight before consuming.
