|Vanilla Chia Pudding & Berry Compote|
Hello friends!!! Today's recipe is the second from my YouTube Sleep Series that launched last week!
As a healthy living representative, it has been difficult and humbling to admit that something as basic as sleep is a constant struggle for me. I've battled insomnia on and off for the last decade, and while I'm in a good place currently, there have been countless dark nights. Yet, despite chronic exhaustion at times, I've still managed to grow a business, maintain relationships and have ample joy and energy.
How? Through diet, exercise and mindset. I've accumulated so many recipes, tips and tricks for living a vibrant wholesome life, when you're not sleeping well/enough. And my YouTube channel is the place where I will share that info. Like this chia pudding recipe with the easiest berry compote.
When you're not sleeping, the last thing you want to do is cook. It's draining to even open the refrigerator and peel off tupperware, let alone turn on a burner or do some chopping...actually, maybe DON'T do either of those things. You want to roll out of bed, wobble into the kitchen and have something that tastes incredible and has the healthy protein, fat and fiber you need for a sustained energy boost. This pudding is all of those things! Not only do chia seeds have a great macronutrient ratio, they also contain antioxidants, magnesium, calcium, and a host of other nutrients your sleep-deprived body needs. It's also a one-step recipe that you can (and might) do in your sleep. You can quadruple this recipe and have it throughout the week, and it's also an awesome vehicle for toppings and variations. You don't have to make the compote, but it's also insanely easy and scalable.
