Triple Chocolate Cake |

Have you ever played the "last meal" game?
The premise is pretty morbid—what you'd want to eat as your last meal on earth—but the answers are so much fun to hear!
I'm still figuring out the savory portion of mine, but I know with 100% certainty that dessert would consistent of something incredibly rich and incredibly chocolaty. Molten lava cake, dark chocolate mousse or...THIS Triple Chocolate Cake.
I haven't shared many cake recipes over here, simply because I find them a little intimidating. I mean, there are layers. They're big. They require frosting, which I'm always sure I'll screw up. Just seems like there's more margin for error in the cake department.
And yet, when I stumbled upon a picture THIS Chocolate Cake by Foodess and saw my dream last meal flash before my eyes, I HAD to make it.
For the first go-round, I baked it up exactly as written in her original post, to know what I was working with. Boy oh boy, did she create something special! If you're a chocolate fanatic like me, this cake is truly the stuff of dreams.
While I didn't want to improve upon the flavor of her creation, I did want to healthify it a bit, since I was enjoying slices for pretty much all three meals of the day. So I make some tweaks, such as subbing white flour for spelt, monkfruit and coconut sugar for white sugar and the Simple Mills frosting for a classic buttercream. I also tested it with Teeccino, which is a caffeine-free herbal coffee-like beverage, for my other caffeine-sensitive babes out there.
Even with this LL Balanced version, I highly recommend slicing and freezing leftovers ASAP, if you're not serving it to a group, as it will call to you with a fudgy siren song 24/7. Plus, how fun is it to know that you have triple chocolate cake just hanging out in your freezer whenever you have an insatiable craving?
