If you've been around these parts for a while, it's no secret that MAXican food is quite popular in our household. My handsome guy could eat nachos and tacos all day everyday, but he is also my number one fan and wants to live an LL Balanced lifestyle. Thus, a healthier version of his favorite dishes is a must!
It's no skin off my nose to make this happen—who doesn't love Mexican food?! I recently taught a class on healthy meal planning, and one of the tips I mentioned is keeping a homemade taco seasoning around. Most store-bought seasonings are full of sodium and preservatives and can taste stale because, well, they are. A batch of homemade seasoning takes less then 5 minutes to make and it's your best dinner ally to get delicious flavor quickly! I make a triple batch and keep it stored in a sealed jar for the future.
