Sweet Potato Reeses Cups |

I wish I could take 100% credit for the inspiration behind these insanely amazing Sweet Potato Reeses Cups. But I had a little help from one of my favorite places in Nashville, The Green Door Gourmet (GDG). As they describe on their website:
"Green Door Gourmet grows up to 80 varieties of herbs and flowers, and a wide assortment of fresh produce grown using natural methods which follow an organic holistic model. We harvest as close to customer-scheduled pick up as possible to maintain the integrity of our product. We do not sell anything that does not pass our own “taste tests.”
In addition to their produce, Green Door houses a beautiful co-op filled with food and products from local artisans. I always grab raw cheeses, honey and some of GDG Chef Richard's house-made sauerkraut when I'm there.
I was honored when they asked me to teach a class on healthy Halloween treats, coming up this Saturday, October 28th! The class is for parents and kids, age 6 and older, and it will be a blast. If you're interested, you can sign up HERE.
Anyhoo, Chef Richard suggested I incorporate seasonal produce into my recipes, and thus came my inspo for SWEET POTATO Reeses! I knew that creamy, slightly savory peanut butter would be a lovely companion for sweet potatoes, and it would lend a holiday-appropriate orange hue to the filling. Using dark chocolate boosts the antioxidant content, and I personally prefer a hint of bitterness instead of all sweet. However, feel free to make these with whatever chocolate you or your little ones prefer!
These healthy Reeses Cups are (almost) as much fun to make as to enjoy! It is so rewarding to bite into the finished product and taste that perfect, soft filling and to know you're not harming your body. Happy Halloween friends!
