Pumpkin Spice Smoothie Bowl |

I wrote an entire post for this recipe that somehow was promptly deleted. At first, I considered chucking it into the bubble bath that I wanted to run...at 10 am. But then, I decided it happened for a reason. I decided the post was too wordy, missing the point that I was going to get across.
Which is that we're in October, the absolute best month of the year, and I have a plan to celebrate this glorious month in as many ways as possible. Taking my workouts outside, gorging on fresh crisp apples, decorating the table with dried gourds and pumpkin...life is especially good in October, and I want to pay homage.
This Pumpkin Spice Smoothie bowl is a good place to start. No matter how chilly the weather gets (ask me again in January), smoothies always hold a place in my breakfast rotation. Nothing beats their simplicity and portability, but a fall smoothie doesn't scream tropical fruit or citrus. Instead, it encourages spices, creamy textures and hearty ingredients. My Pumpkin Spice smoothie bowl is all that and more. Packed with fiber, healthy fat and protein, it will keep you going for several hours, and it's even more delicious than nutritious! I almost called it a milkshake, because it tastes decadent enough for dessert—cinnamon and unctuous pumpkin puree are cozy and warming, yet it registers as ice cream to your happy brain and mouth.
October will still go by in warp speed, but I plan to have enough vivid, beautiful memories of Fall to last the next 11 months. That though definitely wasn't in my original post, but I like it very much.
***If you want to up the protein in your smoothie bowl, try adding more chia seeds, or protein powder, or beef gelatin (!). I've linked my favorites below.
Favorite Chia Seeds: Nutiva Organic Black Chia Seeds
