Happy official summer, babes!!!

A few weeks ago, I was asked to participate in an awesome challenge created by Kate, founder of Root + Revel, a blog I've been following for years!

For my contribution, I decided share this Power C Sunshine Smoothie I created for my cookbook, because it is such an ideal fit for this steamy time of year!!! Think: bright flavor from juicy citrus, soothing for sore throats and packed with Vitamin C and turmeric—anti-inflammatory nutrients that can help repair sun-damaged skin. Fresh ginger is incredible for aiding in digestion, so this is a great option the morning after a BBQ or 4th of July celebration! This hydrating, creamy smoothie tastes like a frozen tropical drink, minus the booze (which, hey, no judgement if some ends up in there). Just looking at it puts me in a happy Summer kinda mood!

INGREDIENTS
  • 1/3 cup canned full fat coconut milk
  • 1/3 cup water
  • 1/2 fresh large navel orange (or 1 small orange)
  • 1 1/4 frozen bananas (approx 1 rounded cup)
  • 1 inch piece ginger root
  • 1/4 teaspoon turmeric
  • 1 teaspoon honey or maple syrup (optional)
DIRECTIONS
  1. Place all ingredients in a high-powered blender in the order listed and blend until smooth. Serve immediately.
  2. TURN IT INTO A SMOOTHIE BOWL! Eliminate the water and use 1/4 cup coconut milk. Blend, using a tamper until it reaches a frozen yogurt consistency.
