|Husband Favorite Salad|
My husband is incredibly appreciative of every dish I put before him on the table. However, in the last three years, I've come to expect that vegetables will be enjoyed, but rarely revisited for a second round. Meat on the other hand—well let's just call him the President of the Carnivore's Clean Plate Club (should I trademark?!)
That is, until this salad. I made this salad as a vessel to hold a Cucumber Mint Vinaigrette I created and fell in love with. I didn't want any of the salad ingredients to trump the vinaigrette, so I kept them classic: crunchy romaine and cukes, sweet cherry tomatoes, creamy avocado.
Well, never could I have imagined just how harmoniously all of these components would marry when I tossed them in my Cucumber Mint Vinaigrette. Or that my husband would not only go back for salad seconds, but bleat piteously the next day when he discovered all the salad was gone.
I can't quite articulate why I decided to extend Max's love of this salad to all husbands, but I just have a hunch. There's something simple and comforting about this salad, and it doesn't smack you in the face with obvious health-fulness. I think romaine feels somewhat indulgent to him, because I've obnoxiously hammered home the importance of dark leafy greens. But that crunchy lettuce of our childhood contains many nutrients, such as Vitamins C and B, fiber folic acid and potassium. Plus, it just tastes great.
Needless to say, I immediately remade this salad the following night, and will try to keep it in the rotation as much as possible despite the constant recipe testing. P.S. Don't have a hubby? This salad does NOT discriminate, and it can and should be beloved by all!
