Greek Salad & 3 Ingredient Hummus Dressing |

Why is it that the easiest recipes are the ones I always forget to post? When I know full well from experience (personally and with you guys), that they're often the most popular. They're popular for the same reasons I personally come back to them over and over again—quick,versatile, healthy and of course, yummy!
I have been making this hummus dressing forever, and I only thought to share it when I made it on Insta-stories recently and got such an overwhelming response from y'all. Well, better late than never, right?
As a bonus to my silly-simple Hummus Dressing, I'm also sharing my onion-free Greek Salad recipe that is a instant crowd pleaser. It's no secret that I love romaine lettuce (I still make my Husband Favorite Salad on the reg). It's mild, crunchy, refreshing and it holds up beautifully in the fridge. I also feel so satisfied after eating a romaine-based salad. Plus, it's no nutritional slouch, containing fiber, B vitamins, Vitamin C and a host of minerals. If that's not enough for ya, you can use romaine as a vehicle for more nutritious foods.
This salad is full of healthy fats from olives, feta, pine nuts and sometimes avocado. If you're going to use feta, I suggest goat feta from 100% pasture-raised goats, which may be easier to digest than cow-based feta and ensures humane practices.
And then, the star of the show, THIS dressing. Because the recipe is so simple, it's important to choose hummus that you love. My favorites are The Hummus Chick original flavor (Nashville native woot woot!) and Roots Roasted Garlic Hummus. You also want to make sure that your balsamic is fresh, and you're not blowing off dust from the back of the pantry. Otherwise, you're good to go! Throw it all in a mason jar, give it a shake and VOILA! Feel free to halve or double the recipe as you see fit. You can also play around with different amounts of water, as well as adding other seasonings/spices.
