There is something simply irreplaceable and unbeatable about homemade granola. The combination of crunchy chewy textures, the way it fills a home with warm, inviting scents—it's no wonder that granola has become a maintain in American snack and breakfast cuisine.
Long gone are my days of purchasing granola, because it's invariably expensive, too high in sugar, and doing so robs me of the pleasure of baking it myself. You know what else robs me of the pleasure of baking? Not having enough time to do it.
I've created several granola recipes before, and they're packed with nutritious goodness like buckwheat groats, goji berries, turmeric and on. These recipes are also finicky, requiring several bowls and steps and intense TLC during the baking process. As a result, I sometimes go granola-less simply because I don't feel like all that jazz.
But a few weeks ago, nothing could abate my granola craving, so I decided to just bring it back to the basics. Cinnamon and Raisin are a happy and proven marriage, and they're an absolutely divine flavor pair with crunchy oats, almonds and a hint of coconut. This one-bowl recipe came together in a flash, required very little attention and satisfied all my granola wishes and crunchy snack dreams.
This granola is a crowd-pleaser for picky eaters, especially if you leave out the coconut. My favorite way to eat it is over a bowl of fruit and drizzled with full-fat coconut milk. It's also amazing on top of ice cream with berries, sprinkled on a smoothie bowl, or just by the handful as a snack!
Note: Feel free to get creative if you want to add or subtract anything, just try to keep the ratios the same.
