INGREDIENTS
  • 4 cups watermelon cut into 2-3 inch pieces I bought pre-cut or you can hack away yourself!)
  • 2 cups peaches cut into 1 ½ inch pieces
  • 2 cups organic cherries
  • 1 1/2 cups organic blueberries
  • 1/2 cup fresh mint leaves, finely sliced
  • 2 tablespoons maple syrup
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons lemon juice
  • 1/8 teaspoon cayenne
  • 2 tablespoons water
DIRECTIONS
  1. In a mixing bowl, combine watermelon chunks, peaches and cherries. Toss to incorporate, then add blueberries to the top.
  2. In a mixing bowl, whisk together mint, maple syrup, apple cider vinegar, lemon juice, cayenne and water.
  3. Pour mixture over fruit salad, then gently toss to distribute, trying not to break up blueberries.
