  • 1 1/4 cups raw pecans
  • 3/4 cup rolled oats
  • 1 packed cup Medjool dates pitted
  • 2 tablespoons molasses
  • 1 1/2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon sea salt
  • optional: 2 tablespoons coconut sugar (for rolling)
  1. Preheat oven to 350 degrees and add pecans to a baking sheet (no need to line). Roast pecans for 10-12 minutes, until fragrant and slightly darkened in color.
  2. While pecans are roasting, add all remaining ingredients (except coconut sugar, if using), to a food processor. When pecans come out of the oven, allow to cool 2 minutes, then add to food processor. You want to add them when they’re still warm, because this will “wake up" the spices.
  3. Process mixture until you can barely see pieces of oats any more, and the mixture sticks easily when pinched in your fingers. Create Energy Bites by rolling 2 packed tablespoons of dough into balls. Place on a baking sheet. If desired, add two tablespoons coconut sugar to a plate or shallow bowl and gently roll bites in sugar to coat. Place back on baking sheet and cover loosely with saran wrap or aluminum foil (save for reuse!).
  4. Refrigerate Bites for one hour before serving. At this point, they will be firm enough that you can stack them in a sealable container. Keep Bite refrigerated. They will keep tightly sealed in the fridge for one week. *NOTE: you can enjoy these before refrigerating, but they will be softer and stickier
