Blueberry Coconut Porridge 2.0 |

Cleopatra comin' atcha with another RECIPE REDUX today!!!! As I've been diving nose-first (or, taste-first?) into my cookbook, I've been going back through my recipes to see what keepers deserve to make their way to print. This Blueberry Coconut Porridge definitely makes the cut! The ingredient list might look long, but you likely already have most of them, and each takes just a second to throw in the bowl.
The combination of blueberry and coconut flavor are sublime on their own, but the one special "kicker" in this recipe is almond extract. It just rounds out the porridge, complementing all the other flavors. If you only have vanilla extract, or neither, you'll still have a fabulous end result, but I recommend grabbing some almond extract. It will last for a lonnngggg time...unless you make this every morning, which is a real possibility!
I first made this porridge on a steamy Tennessee August evening, and it is truly a perfect desert in the warmer months. You mix it up at night, and the next morning you have zero work to do for a delicious, nourishing breakfast! Healthy fats, protein and fiber make this Blueberry Coconut Porridge deeply satisfying and it will get your digestive system started off on the right foot.
This version is pretty similar to the original, but I tweaked a few ingredients and re-did the instructions, so they're more accurate. Plus, I made it purtier :). I hope y'all give it a try this time around!
