Blackberry Breakfast Bread |

Things that come out of a icepocalypse | being stuck at home for 5 days:
|| An epic wardrobe clean-out (50 Shades of old tee-shirt, anyone?).
|| Jane Fonda: at home workouts wearing the old Ambercrombie leg warmers discovered in said wardrobe clean-out.
|| A conviction that one's pets can, in fact, talk.
|| Birthchild recipes of a bleak, scavenged pantry and my desire for anything cozy, carby and baked.
Enter Blackberry Breakfast Bread.
On day 3 at home, pacing in my pjs at approximately 4 pm, I was struck with an intense craving for Sylvia's Blueberry Health Muffins. In angst, I realized I had no blueberries, no apple and no muffin tin. But I could not be deterred. I pulled out a fresh pint of blackberries, my Bourbon vanilla extract and a loaf tin, took a deep breath and got to mixin'.
I promise you, I have failures in the kitchen (see missing muffin tin above). Especially when I'm pretty much winging it. But this, this was anything but a failure. When I returned to human civilization several days later and gave THE Sylvia a slice of my blackberry loaf, she said it tasted like cake. Super healthy cake for breakfast?! I'll take it.
I ate approximately 11 of the 12 slices I got out of this amazing bread, so I am somewhat of a toppings experts at this point. I have to recommend eating this slightly warmed in the oven with any of the following combinations:
almond butter with cinnamon and sea salt | peanut butter with honey | grassfed butter and mashed raspberries | crumbled over yogurt (I recommend plain Siggis with stevia and vanilla extract added) | best of all...cold from the fridge as an on-the-go snack!
