|Avocado Cream Cheese & Basil Chimichurri Toast|
Every now and again, I enjoy a meal that haunts my dreams. You know, in a good way. One such dish is the Avocado Toast from The Box by Bongo Java here in Nashvegas.
I know what you're thinking. Avocado toast, LL? Could you be more basic? Or, at least, Avo Toast is soooo 2015.
No. This avocado toast is ANYTHING but basic, and is it precisely, perfectly appropriate here in April of 2018.
Really, this is more than avocado toast. It is a brilliant hybrid of avocado toast, your favorite New York bagel and one of the best summer grilling condiments.
To break it down: AVOCADO CREAM CHEESE + CHIMICHURRI SAUCE = Heaven
Y'all. I didn't know I needed avocado cream cheese in my life until I experienced this meal, but now all time before is just a blur. And I think you'll feel the same way with my version!
In addition to their use of avo cream cheese and chimichurri, which is the perfect combination of creamy/decadent and tangy/bright, the Box chooses their bread very carefully, and so should you. They picked a bread that has a nice crusty edge BUT, KEY, is easy to cut or bite through. So there's no fear of avocado chunks flying off your plate when you dive in.
Instead of using parsley, which is a traditional herb in chimichurri, I went with basil. I just prefer the flavor, frankly! But feel free to sub with whatever herb you like. I also used white balsamic vinegar, which is lighter and a touch sweetener than the custom red wine vinegar.
And I decided to keep it dairy-free for all my DF peeps out there, but that's totally up to you as well!
