3 Ingredient Creamy Watermelon Popsicles |

I scream, you scream, we all scream for....W A T E R M E L O N!!!! Seriously, y'all, is there anything that screams summer more than this juicy jewel of a fruit? Along with outdoor BBQ, fireflies and bare feet, watermelon heralds the return of our warmest, and my favorite, season.
One of the things I adore about living in the South is that our warm season is almost 3/4 of the year. This means bathings suits can find their way into March or October, and that watermelon weather (not to be confused with season) starts in April. Or at least, that's how we do on LL Balanced.
The return of summer has put me into hard-core popsicle mode. I've been testing healthy Fudgsicles for Families Connect, a family-oriented website I contribute to (check out my Honey Bourbon Chicken Thighs recipe!), and it only seemed right to facilitate a match made in heaven.
Creamy watermelon popsicles, you slay me. In this recipe, three ingredients come together to create fresh, light and effortless summer on a stick. This recipe is an absolutely perfect treat to make with your children or for yourself as a hydrating afternoon pick-me-up. Coconut cream provides an ideal, nourishing substitute for dairy, and a touch of raw honey rounds out the natural sweetness of watermelon.

NOTE || I use these popsicle molds, but Amazon has tons of options. If you don't want to buy molds, dixie cups and wooden stick will do the trick! Just check them after an hour of freezing and adjust the stick so it's in the middle.
