1 Minute Molten Lava Cake |

The microwave??
Whelp, at least in my world! And, in my world, every day can be the most romantic day of the year. I enjoy celebrating Valentine's with anyone I love, but ultimately, we shouldn't need an arbitrary day to show how much we care.
We also don't need an arbitrary day to "allow" ourselves to enjoy something lusciously sweet and decadent. Something like these 1-Minute Molten Lava Cakes!!!! Especially when they are paleo, refined sugar free and full of healthy fats and antioxidants. AMIRIGHT?!
Molten chocolate lava cakes are actually my ALL TIME favorite dessert. There is something so utterly satisfying about breaking through that outer layer into the unctuous melty chocolate center. Add a scoop of vanilla ice cream and I'm done. Stick a fork in me. Send me up the river.

Given this information, it's pretty shocking that I haven't created a molten lava cake for y'all until NOW. But butter better late than never, and I think this single serving delight is 150% worth it!
Single these are Party of 1 friendly, they're an equal-opportunity Valentine's dessert if you're spending the day alone. Or if it's that time of the month. Or if you have no reason in the world other than you need a chocolate fix.
Since everyone enjoys different sweetness levels, different gooey-ness levels AND everyone has a different microwave, feel free to play around with this recipe. Use darker chocolate chips or peanut butter chips or white chocolate! Sub nut butter for the avocado oil or butter. Sub cherry juice for the nut milk & add dried cherries if you love that combo. And absolutely adjust to more or less microwave time, based on your preference.
