INGREDIENTS
  • PUDDING
  • 3 tablespoons chia seeds
  • 1/4 cup full fat coconut milk
  • 3/4 cup filtered water
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla bean powder (sub 3/4 tsp extract)
  • 1 tablespoon coconut or almond butter (make sure coconut butter is melted)
  • pinch sea salt
  • pinch cinnamon
  • COMPOTE
  • 1 cup frozen cherries
  • 1 cup frozen blueberries
  • 2 tablespoons raw honey
DIRECTIONS
PUDDING
  1. Place all ingredients in a bowl and whisk vigorously every 2-3 minutes for 15 minutes. Cover, refrigerate overnight, and enjoy the following morning!
  2. TOPPINGS IDEAS || (compote below), banana, fresh berries, hemp seeds, nut butter, coconut flakes, cacao nibs, dried apricots, mulberries. Stir in 1 tbsp cocoa powder for a chocolate version
COMPOTE
  1. NOTE: This makes 4 servings Place cherries, blueberries and honey in a small saucepan. Add 1/4 cup water and heat to medium-low. Cook, stirring, until fruit has softened and melted into a thick compote consistency, approximately 10 minutes.
