|Luscious Vegan Egg Nog|
Some things are best when enjoyed in small, rich doses, such as an ultra fudge-y brownie or a juicy filet mignon. I want just the right amount of each, and more isn't more satisfying.
I would also add egg nog to this camp. A small cup of creamy, lightly spiced egg nog with a splash of Kentucky bourbon is a delight to sip slowly. 'Slugging' a bunch of egg nog takes away what makes it special; it requires you to be present and mindful.
Which is exactly what we ALL need this holiday season. We need reminders to take life one day—one moment—at a time. We have no idea what 2021 brings, and we can't force the days to lengthen or the sun to shine hotter. We are HERE, in the chilly and dark of December, without answers that we fervently hope for. So we might as well take advantage of what the season has to offer.
I wanted to put my spin on a classic egg nog for a few reasons. Firstly, because I wanted my vegan friends to be able to enjoy this holiday tradition. Secondly, because I wanted to lighten the sweetness of classic nog. Mine is sweet, but not cloyingly so. I also threw in some orange zest, and that might be my favorite aspect of all! Plus, orange pairs with pretty much any booze you like :). I also love this nog warm or straight from the fridge, depending on my mood (just remember that you may have to whisk in some water, as it thickens).
I know some of you love this time of year, despite or perhaps because of what 2020 has brought your way. But I also know that many of you are having a difficult time. I hope that you can take advantage of small ways to nourish yourself from the inside out, so that you can find a little pleasure in the day to day: a bath, candles, a bundled walk, gooey chocolate chip cookies or a bowl of soup, fuzzy slippers, and maybe a cup of my egg nog!
