  • 1/3 cup full fat canned coconut milk
  • 1/2 cup cold water
  • 1/4 pc frozen avocado
  • 1/4 cup raw cashews
  • 2 tablespoons lime juice plus zest (zest before juicing)
  • 2 teaspoons yacon syrup
  • handful fresh cilantro
  • 1 1/2 cups loose baby spinach
DIRECTIONS
  1. Blend all ingredients until creamy, adding water as necessary to achieve desired texture.
