|Cinnamon Roll Blender Pancakes (Gluten-Free)|
These little puppies came to life simply from a craving. I'd had a treat-filled weekend, so while I was in the mood for something indulgent-tasting, I also wanted to give my blood sugar a break. Healthy-ish pancakes sounded like just the ticket!
I love substituting oat flour for all-purpose flour in certain recipes; it has a density and heartiness that works beautifully in some dishes. I particularly love it in pancakes, so much so that I have an oat "Johnnycakes" recipe in my first cookbook.
For this version, I decided to create cinnamon roll vibes with a gooey filling fit for your favorite brunch spread, and a little goes a long way. While these pancakes make you feel spoiled, they are contain fiber, minerals, protein and some healthy fat, so they'll keep you satisfied throughout the morning.
If for some reason you're not feeling this flavor combination, you can eliminate the cinnamon filling and just use the base recipe for any toppings you like. Certainly blueberry, banana, chocolate chips would all be phenomenal.
