Caramel Apple Breakfast Pizzas

  • 2 cups Quaker Old Fashioned Oats
  • 2 tablespoons chia seeds
  • 1/8th teaspoon sea salt (pinch)
  • 1/4 teaspoon cinnamon
  • 4 ounces room-temperature unsweetened applesauce (if it's cold, it will solidify the coconut oil)
  • 1 tablespoon melted coconut oil
  • 2 tablespoons maple syrup
  • 1/4 teaspoon vanilla extract
  • 2 medium apples, peeled & chopped into 3/4" pieces (approximately 3 cups; I like honeycrisp or pink lady)
  • 1 tablespoon maple syrup
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/8th teaspoon sea salt (pinch)
  • 1/4 cup unsweetened unsalted almond or peanut butter
  1. Preheat oven to 375 and line a baking sheet with nonstick parchment paper.
  2. Add 1 cup oats to a blender or food processor and pulse until they form a flour consistency. Add oat flour to a mixing bowl, along with remaining cup oats, chia seeds, sea salt and cinnamon.
  3. In a separate bowl, whisk together applesauce, coconut oil, maple syrup and vanilla extract.
  4. Add wet ingredients to dry and stir until it forms a sticky dough--it will seem to dry at first, but just keep mixing. Use a water-dampened ⅓ cup measuring scoop to make four equal-sized rounds of dough. Dampen hands with water and press each round into a circle a little less than 5” in diameter.
  5. Bake for 15-18 minutes, 15 if you want a softer consistency (my preference), 18 if you like some crunchier edges. Allow to cool 10 minutes before serving.
  1. Heat a large saute pan to medium heat and add ⅓ cup water. When water is bubbling, add apples to the pan. Cook, stirring every minute or so, until apples are softened with some golden-brown edges, approximately 10 minutes. Feel free to add splashes of water throughout the cooking process to prevent sticking/burning.
  2. Add remaining ingredients and another splash of water. Cook, stirring every minute or so, another 5 minutes. Remove from the heat and allow to cool 5 minutes before serving.
  1. To serve: spread a tablespoon of almond or peanut butter on each pizza and top with ¼ of the apples. I also like to an add extra sprinkle of cinnamon. Keep apples and pizzas separately storage in airtight containers in the refrigerator up to 5 days. To reheat, you can add assemble pizzas and bake for 8 minutes at 350, or assemble and microwave 25 seconds. Pizzas will keep for up to 5 days tightly sealed in the refrigerator.
