Ahhhh!!!! This is the first post I am writing from my new home in Asheville, North Carolina, and I am pinching myself that this dream has finally come true. I will be here for at least 6 months, and then I'll evaluate what's next. But I know that this is exactly where I'm supposed to be right now, and I am thrilled to take y'all along in the journey!
To commence my mountain sabbatical, I thought I would share my Camp Cookie recipe. These babies taste like a decadent cookie, but they're packed with satisfying fiber, fat and protein. These make an excellent addition to your next outdoor excursion, whether it's a camping trip, a hike, a long bike ride, a day on the river, or a picnic!
My Camp Cookies are also ideal for my busy friends and / or their kiddos, who could use a quick and easy, portable breakfast or snack. I personally like to spread a little peanut butter between two, wrap and freeze overnight, then throw in my backpack until I'm hungry a few hours later.
You can absolutely customize the ingredients, but note that if you leave out nuts or coconut, you'll want to add something in its place, so the batter isn't too gooey. Dried fruit, butterscotch chips, pumpkin or sunflower seeds, M&Ms, mini marshmallows--you get the idea :).
