Balance: Peach and Mint Popsicles

43 oz. popsicles
INGREDIENTS
  • 1 1/2 cups peaches wash and cut into 1-inch chunks (approximately 2 large peaches) optional: remove skins
  • 2 tablespoons fresh mint finely diced
  • 3/4 cup full-fat plain Greek yogurt
  • 3 tablespoons coconut nectar can use maple syrup or honey
  • Popsicle molds
DIRECTIONS
  1. Add all ingredients to a food processor and puree until smooth. Divide mixture into popsicle molds.
  2. Freeze overnight before serving. It may be helpful to run the molds under hot water for a few seconds to loosen the popsicles a bit.
