You GUYS, I am jumping out of my skin! Today my fiancé and I leave for our 8 day trip to Italy, and I could not be more excited! My love of all things Italian is inexplicable in origin but deep and abiding. The language and culture seem as delicious and warm as the food, and I have dreamt of visiting as long as I can remember. I even took Italian throughout college in preparation for a trip that never came to be.
I plan to switch gears a bit while in Italy and share several blog posts of our experience. If I can get my hands on a recipe, that’s wonderful, but the goal will be to inspire you to dream and then create.
In preparation for our trip, I’ve been experimenting with hearty snacks that can provide cheap nutrition for us as we navigate the dangerous waters of airline food. My sweet and savory granola bars are a perfect solution. Tough enough to rattle around in your bag or backpack, these bars are are still moist and chewy, with that addicting sweet/salty combo. They’re as nutritionally dense as they are yummy, including anti-inflammatory spices, happy fats found in nuts, seeds and olive oil, and fiber from the oat bran and dried fruit. Truly, they check all the boxes for a healthy on-the-go snack!
