INGREDIENTS
  • 1/2 cup raw walnuts
  • 1/2 cup tamari roasted almonds (I found those at a local health food store - you can substitute for plain roasted almonds)
  • 1 cup Medjool dates pitted
  • 1/2 cut raw oat bran
  • 2 tablespoons raw honey
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 1 flax egg: 1flax meal plus 3 tablespoons water allow to sit 10 minutes
  • 1 tablespoon 1extra virgin olive oil
  • 1/3 cup raw pumpkin seeds
  • 1/3 cup raw pistachios
  • 1/3 cup chopped unsulphured dried apricots
DIRECTIONS
    1. Preheat oven to 350 degrees F.
    2. Line a small baking dish with parchment paper (mine is 10x7)
    3. Combine walnuts, almonds and dates in a food processor. Process until incorporate into a sticky crumble.
    4. Add oat bran, honey, spices, flax egg and olive oil to food processor. Process until incorporated (it will have a grainy texture).
    5. Empty food processor contents into a large bowl and add pumpkin seeds, pistachios and apricots. Use your clean hands to mixt together.
    6. Turn mixture into your baking dish and press evenly and firmly to fill entire pan. I used an extra sheet of parchment on top and rolled small rolling pill to ensure that everything was the same thickness (approx. 2 inches).
    7. Bake for 35 minutes or until golden-brown around the edges and bars are firm to touch but not hard.
    8. Cool for 25 minutes in the fridge before slicing.
