INGREDIENTS
  • Flatbread
  • 5 tablespoons coconut flour
  • 1/4 cup golden flax meal
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon dried rosemary minced
  • 1/4 teaspoon dried basil
  • 3 organic cage-free eggs lightly beaten
  • 3/4 cup unsweetened almond milk
  • Sweet Pea Pesto
  • 1/4 white onion diced
  • 3 garlic cloves roughly minced
  • 3 tablespoons extra-virgin olive oil plus more to taste
  • 1 lb organic sweet green peas thawed
  • 1 ¼ cup raw almonds
  • 1 ½ teaspoons sea salt
  • 1 teaspoon miso paste
  • Mushroom Bacon
  • 2 ½ tablespoons gluten-free tamari low sodium
  • ½ teaspoon smoked paprika
  • 1 ½ cups button mushrooms cleaned, destemmed and sliced into 1/8th inch thick pieces
DIRECTIONS
Flatbread
  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Combine all dry ingredients and whisk together. Add eggs and almond milk. Stir to incorporate and allow to sit for 10 minutes.
  3. Pour 1/3 cup batter onto baking sheet and use a spatula to spread evenly to 1/4 inch thickness. You can wet the spatula with water to help spread batter.
  4. Bake for 12-15 minutes or until flatbread is golden brown around the edges but slightly springy to touch in the middle.
  5. Allow to cool 5 minutes and add as much Sweet Pea Pesto and Mushroom Bacon as you like. Place bake in the oven for 3 minutes or until pesto is heated through.
Sweet Pea Pesto
  1. Heat a saute pan to medium-high and add 1 tablespoon olive oil. When oil is shimmering, add onion and garlic.
  2. Sauté for 3-4 minutes or until translucent and fragrant.
  3. Remove from heat and allow to cool.
  4. Combine onions, garlic and remaining ingredients in a food processor and pulse until incorporate but still textured. Add olive oil and sea salt as you like.
Mushroom Bacon
  1. Preheat oven to 350 degrees F. Line a baking sheet (or 2) with parchment paper.
  2. Combine tamari and paprika in a large bowl. Add mushrooms and toss to coat.
  3. Place mushrooms on baking sheet(s) so that none are touching. Bake for 30-35 minutes or until mushrooms are dried out and slightly crispy around the edges (check every 5 minutes, as they burn easily).
  4. Allow to cool 10 minutes before using a wide-set spatula to scrape them off the parchment.
  5. *NOTE: You can bake the Mushroom Bacon at the same time as the Flatbread.
