|Mushroom Bacon and Pea Pesto Flatbread|
There's just something about bread plus toppings that cannot be beat. Am I right or am I right?
Call it pizza, flatbread or your stand-in boyfriend, this combination is a food darling of American culture. It's not just because there's a blanket of cheese on top (though that doesn't hurt); we delight in the contrast of carby goodness with some other flavor and texture profile.
As a result, us health-foodies stretch and morph the pizza margins to fit our cause for a world where food can be nourishing and pleasurable. Who knew that cauliflower pizza (like this one) would make headlines around the blogosphere?! But it bakes up all nice and crispy and bread-like and is extremely satisfying to eat. Plus, in our weird world, you can eat an entire pizza for dinner and feel fantastic!
Today's recipe is another example of this not-so-sinister trick. Although it contains no bread, tomato sauce OR cheese, it will happily take the place of your Friday night Papa Johns order. Coconut flour and flaxseed meal create a doughy base that's also packed with fiber and protein. The pea pesto layer has a hint of sweetness, and it marries beautifully with smoky, crispy mushrooms. Both elements are so delicious you will find yourself eating half the batch before they land on your flat"bread"!
Skeptical? Try it, and if you're still craving take-out I will order your pie myself. Also, if the pea pesto/mushroom combination isn't rocking your world, you can certainly make the flatbread with any other toppings. Leave the herbs out, and you could even take it a sweet direction...smothered with butter and jam! I've included some other ideas below.
*NOTE: You can make these ahead of time and bring them to work for the week. They hold up very well overnight and are fantastic cold. I added a sprinkle of salt to my leftovers to bring out the flavor.
