By now, y’all have heard me use my fiance’s tastebuds as a barometer for my sweeter-side recipes. He enjoys desserts, but he’d generally choose something savory and hearty over a treat. This is fantastic for me when I’m testing, because I know that if he digs a dessert enough for seconds, it’s exceptional. THESE Maple Pecan Balls found their way into his hot not-little hands FOUR times over. I'm still glowing.
There’s just something about the combination of maple and pecans that makes my southern soul sing, and I had to try my hand at a healthier version of this classic pie. I knew I wanted an almost-raw, dump and blend kind of recipe…something I can throw together quickly for a healthy snack or breakfast. Never did I imagine that these would end up tasting as decadent and satisfying as a candy bar or slice of cake.

Every ingredient in this recipe is raw except for the maple extract, which means you get a healthy dose of vitamins, minerals, unrefined sugars and fiber. The brand of maple extract that I used contains all "natural flavors", but I don't know exactly what that entails. Since the recipe calls for such a tiny amount, this doesn't concern me. However, feel free to leave it out if you would like...I just can't vouch for the same outrageously delicious taste!
