|Blueberry Lime Popsicles|
Popsicles are so much fun to make. They're about as easy as "cooking" gets, there are endless possibilities, and they're almost always a crowd pleaser.
For the 4th of July, I decided to whip up some festive popsicles to hand out to friends in the muggy Tennessee July heat. I tend to prefer creamy, indulgent popsicles—chocolate, coconut, caramel etc (yes, I plan to test all of these!)—so I sent out an SOS for fruit-focused popsicle inspiration. One of my dearest friends from childhood threw out the combo of Blueberry and Lime, and I was off to the stove-top races!
I completely winged the ratio of fruit to sweetener to puckering lime, but these turned out beautifully on the first try! Blending the mixture without straining it creates an almost creamy texture and prevent the pops from becoming icy.
The real test for these popsicles came when I offered them to our 4th of July crowd, and they received resounding approval from all. A 13th month old baby was left smiling with purple-stained cheeks, an 8 year old said "these should go in your book!" and my 33 year old husband took his down in about four bites. Success!
Besides their delicious taste, these pops are packed with antioxidants, which will repair and nourish your body after sun damage. They're barely sweetened, so they won't leave you with sugar jitters like traditional pops. Don't love blueberries? I bet these would taste incredible with other berries, peaches or pineapple!
