INGREDIENTS
  • OATMEAL BAKE
  • 6 cups gluten-free rolled oats
  • 2 teaspoons vanilla powder (sub extract, brand link below)
  • 1 cup coconut sugar
  • 1/2 teaspoon sea salt
  • 1 15 ounce can light canned coconut milk
  • 1 15 ounce can can full-fat coconut milk
  • 1 cup unsweetned almond milk
  • 1/4 cup chia seeds
  • 1/2 cup unsweetened applesauce
  • 2 cup frozen organic blueberries
  • CRUMBLE TOPPING
  • 1/4 cup coconut sugar
  • 2 cups walnuts
  • 1 cup rolled gluten-free oats
  • 1/4 cup coconut oil
DIRECTIONS
  1. NOTE: This makes a LOT of food! You can absolutely halve the recipe if you like. Preheat oven to 350 degrees F and line two 8 x 11.5 x 2 casserole dishes (or similar size) with parchment paper. In a small bowl, mix chia seeds with 1/2 cup water and allow to set 15 minutes.
  2. In the meantime, in a large mixing bowl, combine oats, vanilla, coconut and sea salt (if using vanilla extract, leave out here). In a blender, combine milks, chia gel and applesauce.
  3. Pour wet ingredients into dry and stir to incorporate evenly. Fold in blueberries. Distribute Batter evenly between baking dishes.
  4. In a food processor, combine remaining 1 cups oats, walnuts, 1/4 cup coconut sugar and coconut oil. Pulse to the texture of crumble--small pebble sized pieces. Sprinkle over oatmeal and pat down lightly into the batter.
  5. Bake for 1 hour. Allow to cool 10 minutes before serving. At this point it will not stick together in bars, but it is still delicious. If you want bars, refrigerate overnight and then slice to desired size pieces.
