  • 2 1/4 cups oat bran (Mothers is the best)
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon sea salt
  • 3/4 cup coconut milk (canned, preferably full-fat)
  • 3 eggs (organic, free-range)
  • 1/3 cup maple syrup
  • 2 tablespoons coconut oil (melted)
  • 1 1/2 pints organic blackberries (could use frozen if needed)
  • 2 teaspoons vanilla extract
  1. Preheat oven to 350 degrees and line a loaf tin with parchment paper.
  2. In a large mixing bowl, combine oat bran, baking soda, sea salt and cinnamon. In a small mixing bowl, combine coconut milk, eggs, maple syrup and coconut oil.
  3. Add liquid ingredients to dry ingredients and stir to combine. Fold in blackberries.
  4. Pour batter into loaf tin evenly and bake for 40 minutes, or until a toothpick comes out clean. Allow to cool at least 15 minutes before removing and slicing.

    I made this last night and it tastes great but it is very crumbly! Any tips? It falls apart the second I try and pick up a slice

      Hey Paige!!! That is so strange. Did you make any changes at all? Sometimes too much leavening (baking soda) or fat (the coconut oil) can cause that. Also, how long did you wait before slicing? Sorry for the trouble!

        I didn’t make any changes! I will try it again! It still tastes great!
