INGREDIENTS
  • ¾ cup almond meal
  • ¼ cup coconut flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt
  • 2 teaspoons cinnamon
  • 2 cage free organic eggs
  • 1 tablespoon flax meal mixed with 3 tablespoons water (stand for 10 minutes)
  • 1/3 cup maple syrup
  • 1 tablespoon apple cider vinegar
  • ¼ cup coconut milk
  • ¼ teaspoon vanilla extract
  • Honey Cinnamon Drizzle
  • 2 tablespoons honey
  • 1 teaspoon cinnamon
  • 1/4 teaspoon vanilla extract
  • 2 tablespoons almond milk
DIRECTIONS
  1. Preheat oven to 350 degrees F. and line a muffin tin or grease very well with melted coconut oil (or preferred greasing agent)
  2. In a large mixing bowl, combine almond meal, coconut flour, baking soda, sea salt and cinnamon. Whisk to combine.
  3. In a separate small bowl, combine eggs, flax meal/water, maple syrup, apple cider vinegar, coconut milk and vanilla extract. Whisk to combine.
  4. Add wet ingredients to dry and whisk to incorporate completely. Allow batter to stand for 5 minutes to thicken.
  5. Use a 1/3 cup measure, fill muffin tins ¾ full. I got 7 muffins out of my batter, but it could be 6-8 depending on how much you use.
  6. Drizzle each tin with 1 teaspoon of the Cinnamon Honey Drizzle.
  7. Bake for 26 minutes or until a toothpick comes out clean. Allow to rest for 25 minutes before removing. I highly recommend using liners, as they stuck a little without.
Honey Cinnamon Drizzle
  1. Whisk all ingredients in a small bowl until combined and use as an extra layer of flavor and sweetness for your muffins. Pour over muffins as they are cooling so it absorbs.

      Hey Paige! Somehow the old recipe was lost when I changed to my new website so I re-tested it with this and loved it. I don’t remember the original but it should have been pretty similar to this. Sorry about that!
