INGREDIENTS
  • 1 tablespoon grassfed gelatin
  • 3 tablespoons water
  • 1 cup full fat coconut milk
  • 3/4 cup unsweetened almond milk
  • 3 ounces dark chocolate roughly chopped (around 72%)
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
DIRECTIONS
  1. Combine gelatin with water in a small bowl and allow to coagulate (this should take less than a minute).
  2. Add coconut milk, almond milk and gelatin/water mixture to a small saucepot. Heat to medium-high. Stir continuously until gelatin dissolves.
  3. Add remaining ingredients and whisk until chocolate is completely dissolved and the liquid is smooth (approximately 2-3 minutes). Do not boil.
  4. Pour mixture evenly into 8 ramekins. Cover loosely with aluminum foil and refrigerate overnight before serving.
