I am a Libra. My sign is a set of scales, hanging in perfect balance.
Otherwise, I know very little about my astrological birth right, but this very little that I do know, rings remarkably true.
Throughout my childhood, the concepts of fairness and balance hovered close, encouraging my choices and advising my conscience. If my brother and I split a cookie, and I got the bigger half, I wasn’t the happier for it. No way…it had to be fair.
Thus, in retrospect, it makes perfect sense that my greatest times of confusion and unhappiness have been when I’ve strayed furthest from a balanced mindset.
I now exist in a more vibrant world of joy, energy and opportunity than I’ve ever experienced, reconnected with my childhood guide.
Incorporating the idea of balance into my new career felt fundamental and impossibly right. Although it has been a particularly forceful presence in my life, everyone can and will benefit from living a more balanced life. It is my hope and purpose to help others achieve greater moderation in their day to day choices and actions.
For my first post, I chose a recipe that represents many of my beliefs about health and food, particularly my dear companion, balance.
Yogurt, a form of dairy, plays a crucial role in the texture and satiating goodness of these popsicles.
However, when dairy is consumed in excess and of poor quality, it can cause numerous health concerns, such as mucus, inflammation, skin rashes and irritations, and digestive upset, such as Irritable Bowel Syndrome.
I also prefer to use full-fat, unsweetened and fermented forms of dairy, such as yogurt, kefir, or raw cheese. These forms are subjected to minimal processing, replete with good bacteria and helpful digestive enzymes and enriched with nutrients. These forms are dairy balanced.
The peach and mint popsicles that I’m sharing with you today are also an ode to seasonal produce, the magic of greens, simplicity and exquisite taste—all crucial elements in my concept of healthy food.
Although the yogurt adds an irreplaceable creaminess to the finished product, I use just enough to complement the sweet, unctuous peaches and bright, pungent mint.
Peach and Mint Popsicles
(Yield: approximately 4 3-ounce popsicles)
- 1 ½ cups peaches, wash and cut into 1-inch chunks (approximately 2 large peaches) optional: remove skins
- 2 tablespoons fresh mint, finely diced
- ¾ cup full-fat, plain Greek yogurt
- 3 tablespoons coconut nectar (can use maple syrup or honey)
- Popsicle molds
Add all ingredients to a food processor and puree until smooth. Divide mixture into popsicle molds. Freeze overnight before serving. It may be helpful to run the molds under hot water for a few seconds to loosen the popsicles a bit.
